Carrot Cake Delight


    A flavoursome cake with fresh carrot gratings for a softer texture! When warm goes well with ice cream. 40-45 minutes cooking time.

    • 450g carrots peeled & grated
    • 170g plain flour
    • 2tsp baking powder
    • 1/2tsp bicarbonate of soda
    • 1tsp salt
    • 2tsp ground cinnamon
    • 4 eggs
    • 2tsp vanilla essence
    • 115g dark brown sugar
    • 55g caster sugar
    • 300ml sunflower oil
    • 115g chopped walnuts
    • 85g raisins (optional)
    • 85g unsalted butter, room temperature
    • 350g icing sugar
    • 65ml maple syrup


    1. Preheat your oven 350F/180C/gas 4. Line a 28 x 20cm tin with grease proof paper.
    2. Mix the flour,baking powder,bicarbonate of soda,salt & cinnamon in a bowl. Set aside.
    3. Beat the eggs and add vanilla,sugar & oil. Then add in the dry ingriedients.
    4. Add carrots,walnuts & raisions (optional). Pour into tins and bake till cake spings when touched. Takes 40-45 minutes.
    5. Leave on wire rack to cool.
    6. For the icing cream the butter and icing sugar till soft then add the syrup and mix till blended.
    7. Once the cake has cooled you can spread on the icing over the top.


    For the decorations you can decorate with grated carrot or chopped walnuts.
