The intense flavour of this classic Egyptian drink is obtained by pureeing the peeled limes with their pulp. Add sugar and dilute with water to taste and serve chilled. The limeade keeps for a few days in the fridge.

Peel the limes, cut them in half and remove any seeds. Place in a blender.
Add about 1/3 of the water and puree until smooth.
Strain the puree through a fine sieve into a bowl.
Rinse the blender and pour the strained juice back into the blender. Add sugar to taste and and mix briefly until the sugar dissolves. Dilute with the remaining water and mix again. Refrigerate until well chilled.
