Mehalabya (Egyptian milk pudding)

    Mehalabya (Mahalabia) is a popular dessert in Egypt and other Middle Eastern countries. This rich version features both milk and double cream.

    Serves: 4 

    • 500ml milk
    • 250ml double cream
    • 2 teaspoons vanilla sugar
    • 3 tablespoons granulated sugar
    • 2 to 3 teaspoons cornflour
    • ground cinnamon (optional)

    1. Put milk, double cream, vanilla sugar, sugar and cornflour in a saucepan and whisk until well combined.
    2. Bring to the boil over medium heat and cook, stirring, until thickened. Once the mixture coats the back of a spoon, remove from heat.
    3. Pour into 4 individual dessert bowls. Let cool, then refigerate until chilled, 1 hour or more.
    4. Sprinkle with cinnamon, if liked, and serve.
