Spicy slow cooker potatoes

    This big batch of spicy onions and potatoes is a tasty side dish that's easy to prepare in a slow cooker.

    Serves: 8 

    • 2 tablespoons olive oil
    • 1 large onion, thinly sliced
    • 2 green chilli peppers, thinly sliced
    • 1 tablespoon mustard seeds
    • 1 tablespoon cumin seeds
    • 1 teaspoon caster sugar
    • 1 clove garlic, minced
    • salt and freshly ground black pepper to taste
    • 8 potatoes, peeled and cubed
    • 2 tablespoons dried chilli flakes

    1. Pour olive oil into the bottom of a slow cooker. Layer onion slices over the oil. Add green chilli peppers, mustard seeds, cumin seeds, sugar, garlic, salt and pepper. Layer potatoes on top, seasoning each layer with a sprinkle of salt and dried chilli flakes.
    2. Cook on High until potatoes are tender, 3 1/2 to 4 hours. Stir gently before serving.

    Cook's Notes:

    Substitute coconut oil for the olive oil if preferred.
