Almond and chia seed muffins

    These gluten free muffins are naturally sweetened with maple syrup and apple sauce, and are sustaining thanks to a combination of ground almonds and chia seeds.

    Makes: 10 muffins

    • 200g ground almonds
    • 3 tablespoons ground chia seeds
    • 1/4 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 160g maple syrup
    • 240g unsweetened apple sauce
    • 2 tablespoons lemon zest
    • 1 tablespoon lemon juice

    1. Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cases.
    2. Combine the ground almonds, chia seeds, salt and bicarb in a bowl.
    3. In a large bowl, combine all remaining ingredients. Stir till smooth and well incorporated. Add the dry mixture and stir till just combined. Spoon muffin mixture into prepared cases.
    4. Bake in the preheated oven for 15 to 20 minutes, till a skewer comes out clean.
    5. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
