    Easy traditional Victoria sponge great for all occasions

    • 4 Oz's self raising flour
    • 4 Oz's butter
    • 4 Oz's caster sugar
    • Drop of milk
    • 2 eggs
    • Vanilla essence or any desired flavouring optional
    • Any kind of preferred jam and or cream for filling
    • Small amount of icing sugar for dusting top


    1. Preheat oven to 180 degrees or has mark 5
    2. Grease a sandwich tin
    3. Cream together sugar and butter until smooth
    4. Add some of the flour with one egg and fold in
    5. Add the rest with the other egg and again fold in together
    6. Add drop of milk and flavouring of wanted
    7. Sit between the two sandwich tons as evenly as possible
    8. Cook for 30 to 35 mins or until golden
    9. A good way of knowing if cooked is to gently press down on sponge and if it bounces back its cooked
    10. Once cooked leave to cool on a wire wrack
    11. Add desired filling ie jam or cream
    12. Dust top with icing sugar
    13. Serve and enjoy


    You can add any kind of flavouring to your mixture if wanting coffee nix a teaspoon of instant coffee to a drop of warm water and add to mixture. Butter icing and strawberry jam always go well together for the filling. Also you van add choc chips or glace cherries of using glace cherries always rince them with warm water before hand
