Kiwi-lime ice lollies

    Simple, delicious and refreshing, these frozen ice pops with pureed kiwi and fresh lime juice will cool you down when temperatures rise!

    Serves: 6 

    • 6 kiwi fruits, divided
    • 100g caster sugar
    • 120ml fresh lime juice

    1. Cut 5 kiwi in half crosswise and scoop flesh from skins with a spoon. Blend with sugar and lime juice in a blender until pureed, about 15 seconds.
    2. Transfer to a measuring jug and pour into 6 ice pop moulds, dividing evenly.
    3. Peel remaining kiwi and thinly slice crosswise into 12 slices. Submerge 2 slices in each mould, arranging them so 1 slice presses against each of the mould's wider sides. Cover moulds, insert sticks between the slices; freeze until solid, at least 4 hours and up to 2 weeks.


    To showcase the kiwi slices in these ice lollies, use flat rather than cylindrical moulds.
