Curried pasta salad

    A simple but tasty pasta salad, with big bold flavours. Perfect as a BBQ accompaniment or outdoor picnic dish. This recipe, a firm favourite of my grandparents, was passed down to me by my grandmother in 2006. Feel free to experiment with quantities or try adding peppers, peas, ham, perhaps tuna...?

    Ingredients
    Serves: 4 

    • 300g pasta shapes
    • 6 tablespoons mayonnaise
    • 2 tablespoons lemon juice
    • 1 pinch turmeric
    • 1 tablespoon curry powder
    • salt and pepper, to taste
    • 1 apple, chopped
    • 2 celery stalks, chopped
    • 2 tablespoons sultanas or raisins

    1. Cook the pasta in boiling, salted water until al dente. Rinse with boiling water; drain well.
    2. In a large bowl mix the mayonnaise, lemon juice, turmeric and curry powder. Season with salt and pepper.
    3. Mix in the cooked pasta. Add the celery, apple and sultanas to the desired consistency. Chill before serving.
