Succulent Satay Chicken

    Perfect for the BBQ - chicken with big sweet & spicy flavours. We have been evolving and using this recipe time and time again, at barbecues, for kebabs and for salads. It's always very well received... But prepare the meat at least a full day ahead of cooking! Recipe provides about 40 pieces of marinated chicken. Quantities can be varied / multiplied.

    Ingredients

    • 4 good quality skinless chicken breasts
    • 3 tbsp smooth peanut butter
    • 120ml soy sauce
    • 120ml lemon juice
    • 2 tbsp curry powder
    • 1 tbsp brown sugar
    • 2 cloves of garlic crushed
    • 1 tsp hot pepper/ chilli sauce

    Method

    1. In a large bowl, make the marinade by combining the peanut butter, soy sauce, lemon juice, curry powder, sugar, garlic and chilli.
    2. Trim and chop the chicken breasts into 2-3cm cubes, and add to the marinade.
    3. Cover and place the bowl in the fridge for at least 24 hours.
    4. When ready to cook preheat grill/BBQ. Thread the chicken onto preferably metal skewers (to help the meat cook thoroughly). Cook for about 10-12 minutes, and until the meat is cooked through.

    Tip

    Add some of the marinade while cooking, to build the flavours of the finished meat. Chicken can be cooked separately, or skewered with peppers, tomatoes or mushrooms.
