Combine quinoa, water and stock cube in a saucepan. Bring to the boil, then reduce heat and simmer for 25 to 30 minutes, till the quinoa has doubled in size and looks like transparent little pearls. Drain and rinse under cold water.
Meanwhile, cook the broccoli in boiling water until tender. Drain and rinse under cold water.
Combine the quinoa with the broccoli and remaining ingredients. Drizzle with a bit of olive oil, vinegar and honey and season with salt and pepper. Taste and adjust, adding more if liked.
