Bare cupboard crepes

    I made these egg-free crepes for my family one weekend morning when there was practically nothing in the house except for flour and milk. You can use a plant-based milk and oil instead of butter to make them vegan.

    • 150ml milk
    • 125ml water
    • 4 tablespoons melted butter
    • 1 teaspoon sugar
    • 125g plain flour
    • 1 pinch baking powder
    • 1 pinch salt

    1. In a large mixing bowl, blend milk, water, butter, sugar, flour, baking powder and salt. Cover and chill the batter for 15 minutes.
    2. Lightly grease a small frying pan with butter or oil. Heat the pan until hot. Pour approximately 3 tablespoons batter into the pan. Swirl to make the batter cover the bottom. Cook until golden, flip and cook on opposite side.
