Vanilla Cupcake Recipe


    This is a really simple yet tasty cupcake recipe. I recommend serving it with my Swiss Meringue Buttercream recipe.

    • 185g unsalted softened butter
    • 225g caster sugar
    • 200g self-rasing flour
    • 4 eggs; 3 egg whites, 1 full egg
    • 1 tsp vanilla extract
    • 2 tsp black coffee
    • 1 tsp baking powder
    • 1/2 tsp salt


    1. Preheat the oven at 180°C or gas mark 4.
    2. Whisk the unsalted softened butter and caster sugar until it's light and fluffy. This usually takes over 5 minutes.
    3. Separately, beat the eggs, vanilla extract and black coffee until it's light and fluffy. This takes over 5 minutes. Put this with the other mix.
    4. Sift the self-rasing flour, baking powder and salt into the mix. Whisk this until the batter is thick and fluffy.
    5. Evenly put the batter into 12 lined cupcake tins. Put this into the oven for 15-20 minutes.


    Add 150g or 250g of chunky sprinkles to make funfetti!
