Funfetti Cake Recipe


    Sprinkles are a great way to add some fun into your cake! Who doesn't like sprinkles?

    • 250g unsalted softened butter
    • 325g caster sugar
    • 275g self-rasing flour
    • 200-300g thick sprinkles
    • 6 eggs; 4 egg whites, 2 full egg
    • 1 tbsp black coffee
    • 1 1/2 tsp vanilla extract
    • 1 tsp baking powder
    • 3/4 tsp salt


    1. Preheat the oven at 180°C or gas mark 4. Grease or line the cake tin.
    2. Whisk the unsalted softened butter and caster sugar until it's light and fluffy. This usually takes over 5 minutes.
    3. Separately, beat the eggs, vanilla extract and black coffee until it's light and fluffy. This takes over 5 minutes. Put this with the other mix.
    4. Sift the self-rasing flour, baking powder and salt into the mix. Whisk this until the batter is thick and fluffy.
    5. Mix in the sprinkles, don't whisk them or they will get crushed.
    6. Put the batter into a 9 in cake tin. Put this into the oven for 20-25 minutes.


    Mix some sprinkles into the icing to make funfetti icing!
