Ingredients
200g plain flour
100g butter
3-4 tbsp cold water
1 tbsp caster sugar
Filling
2-3 tbsp jam
75g caster sugar
75g SR flour or (half flour and half groung almonds)
75g butter
1 large egg
1-2 tsp almond essence
Flaked almonds for decoration
Method
Preheat the oven to Gas 5/ 190C
Make the shortcrust pastry - rub the fat into the flour until like breadcrumbs.
Bind together with cold water to make a stiff dough.
Leave to chill for 5 minutes.
Prepare the topping - Cream together butter, sugar flour and egg.
Add almond essence, mix to a soft consistency.
Roll out the pastry to the thickness of a £1 coin, cut into circles and line a tart tin or a muffin tin.
Add a little jam into the centre of each.
Place a spoonful of cake topping on the top of the jam making sure that the edges are sealed.
Sprinkle flaked almonds on top.
Bake until well risen firm to touch and golden brown.
Tip
You can do any jam you would like.
