Flavours of the Med (vegan)

    Perfect for vegans and can be tailored depending on what you have in your fridge, just through it all together! Serves 2-3

    • 1 cup giant couscous (uncooked)
    • 1/2 cup wheatberries (uncooked)
    • 1 red onion sliced
    • 1 red pepper sliced
    • 2 cloves of garlic grated
    • 1 sweet potato
    • 10 cherry tomatoes halved
    • 1/2 cucumber diced
    • handful of chopped mint
    • big handful of chopped spinach
    • chopped sundried tomatoes (optional)
    • chopped olives (optional)
    • 2tbsp balsamic vineagar
    • 2tbsp olive oil
    • juice of 1 lemon
    • 1tbsp tumeric (optional)
    • 1tbsp coconut oil


    1. Prep 20mins > Cook 55mins > Eat 1hr
    2. Prepare wheatberries and giant coucous according to packet, usually 50-60mins for wheatberries and 10mins for couscous.
    3. Cook the onions, red peppers & garlic in the coconut oil on medium heat in a frying pan until soft, then add tomatoes to soften.
    4. Stab the sweet potato all round with a knife and put in the microwave on a kitchen roll and cook for 2 mins on full on each side and additional time as required until soft. Leave to cool then peel and dice.
    5. Combine all ingredients in a large bowl and serve.
