Prepare wheatberries and giant coucous according to packet, usually 50-60mins for wheatberries and 10mins for couscous.
Cook the onions, red peppers & garlic in the coconut oil on medium heat in a frying pan until soft, then add tomatoes to soften.
Stab the sweet potato all round with a knife and put in the microwave on a kitchen roll and cook for 2 mins on full on each side and additional time as required until soft. Leave to cool then peel and dice.
Combine all ingredients in a large bowl and serve.
