Qamar el din (Ramadan apricot drink)

    We drink this thick nourishing apricot drink to break fast during Ramadan. The apricot paste, which can be found in Middle Eastern grocery stores, is also a tasty fruit snack.

    Serves: 4 

    • 300g dried apricot paste
    • 450 to 700ml boiling water
    • 3 tablespoons granulated sugar, to taste
    • orange blossom water (optional)

    1. Cut the paste into small pieces with scissors or with a sharp knife. Place in a pot and cover with the boiling water. Let it soften for several hours, stirring once in a while.
    2. Strain through a fine sieve and thin with water to the desired consistency. But do not dilute it too much, this is a thick drink. Sweeten with sugar to taste and flavor with orange blossom water if desired. Refrigerate and serve chilled.
