Broccoli and Cheddar quiche

    Finely chopped broccoli, grated Cheddar, eggs, milk and herbs make up the ingredients for this easy quiche recipe. Use your favourite pastry recipe for the base or roll out a block of shortcrust pastry.

    Serves: 6 

    • 1 pastry recipe for 23cm quiche base or a block of prepared pastry
    • 1 teaspoon vegetable oil, or as needed
    • 175g finely chopped broccoli
    • 4 eggs
    • 120ml milk
    • 1 tablespoon Dijon mustard
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon n freshly ground black pepper
    • 1/2 teaspoon dried thyme
    • 60g grated Cheddar cheese
    • 20g grated Parmesan cheese

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with foil.
    2. Arrange pastry into a 23cm pie dish and prick all over with a fork; brush pastry base with oil and set on prepared baking tray.
    3. Bake pastry base in the preheated oven for 8 minutes.
    4. Place broccoli into a bowl and microwave on high until broccoli is bright green and slightly tender, about 4 minutes. Whisk eggs, milk, mustard, oregano, salt, pepper and thyme in a bowl; stir broccoli into egg mixture. Pour mixture into pastry base and sprinkle quiche with Cheddar and Parmesan cheeses.
    5. Bake until a knife inserted into the middle of the quiche comes out clean, about 40 minutes. Let stand 10 minutes before cutting.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

    I made this recipe & it turned out excellent. I did not have any dijon mustard, so used slightly less yellow mustard with a bit of mayo mixed in.     Great recipe! I modified it by adding Swiss and jalapeño pepper jack cheeses along with the cheddar and Parmesan. Omitted the oregano and used herbs de Provençal instead, and added 1/4 sweet onion and one clove garlic - both chopped finely and sautéed with the brocolli.
