Vegan leek and potato soup

    This soup is easy to make with just 4 cheap ingredients! If you have a little time to make dinner then make this soup, it is really healthy too! Perfect for a warming lunch on a cold day or for a starter!

    Serves: 4 

    • 2 large leeks
    • 4 medium potatoes
    • 850ml stock (made from water and stock cube)
    • black pepper to taste

    1. Wash and peel the leeks and potatoes and chop them.
    2. Place the vegetables into a saucepan and add the stock. Bring to the boil.
    3. Heat until the stock is boiling. Turn down the heat and cook gently for 30 minutes. Add pepper to taste and serve the soup hot.

    Other ideas

    Try this soup with different types of vegetables - carrot, swede, cabbage or peppers could all be added.
    You could also add chopped cooked chicken or a little grated cheese for the last 5 minutes of cooking.
