These small bread rings coated with sesame seeds, called simit, are a popular Turkish snack or street food.

Ingredients
Makes: 8 petits pains simit
sesame seeds for sprinkling
500g plain flour
50g melted butter
50ml olive oil
75ml water
75ml milk
1 egg, lightly beaten
1 (7g) sachet dried active baking yeast
1 teaspoon salt
lightly beaten egg, for brushing

Toast the sesame seeds in an ungreased frying pan until golden. Keep a close eye as they change colour very quickly.
In the bread machine:
Place the olive oil, melted butter, water, milk and egg in the pan of the bread machine. Add flour, salt and yeast and select the setting for Basic or White Bread. The dough should come out smooth and elastic.
By hand:
Mix flour, salt and yeast in a large bowl. Make a well in the flour and add the liquid ingredients. Mix until the dough is smooth and elastic. Let rise for 30 minutes minimum.
To form and bake:
Divide the dough into 8 equal portions and shape them into 15 to 20cm long ropes. Join and seal the ends to form rings. Place them on a baking tray lined with parchment, leaving ample space between them. Let rise for 15 minutes.
Preheat the oven to 180 C / Gas 4. Brush the rings with beaten egg and sprinkle generously with the toasted sesame seeds.
Bake in the preheated oven until golden and crusty, about 20 minutes.
Other ideas
Use nigella seeds or poppy seeds instead of sesame.
