Mizeria (Polish cucumber salad)

    This is a traditional creamy cucumber salad, typically served beside pork chops and smooth mashed potatoes in Poland. Best with young, garden-grown cucumbers.

    Serves: 4 

    • 4 baby cucumbers (or 1 large)
    • 1 teaspoon salt
    • 1 bunch chives, finely chopped
    • 200ml soured cream
    • salt and pepper to taste
    • 1/2 teaspoon sugar, or to taste
    • lemon juice to taste

    1. Wash and peel cucumbers. Slice very thinly or - for best results - use a mandoline. Transfer cucumber slices into a colander and sprinkle with a teaspoon of salt. Set aside for 2 hours.
    2. Squeeze out excess water from cucumbers and combine with chopped chives, sour cream, salt and pepper. Add sugar and lemon juice to taste.
