Polish boiled vegetables and egg salad

    A traditional Polish root vegetable salad with dill pickled cucumbers and hard boiled eggs. Very simple and budget-friendly.

    Serves: 4 

    • 2 carrots
    • 3 potatoes
    • 1 onion, chopped
    • 1 hard boiled egg, diced
    • 1 dill pickled cucumber, diced
    • 1 apple, cored and diced
    • 1 (200g) tin sweetcorn, drained
    • salt and pepper to taste
    • 2 tablespoons mayonnaise

    1. In a medium pan, bring water to a boil. Add carrots and potatoes and boil until tender. Drain, set aside to cool, peel and cut into 5mm dice.
    2. In a large bowl, combine all ingredients, add salt and pepper to taste. Serve at once or chill until serving.
