Simple sponge cupcakes

    As this is a very simple recipe, you could find it quickly becomes a staple of cake making and you are able to make a batch of cupcakes without even looking at the recipe.

    Makes: 12 cupcakes

    • 150g (5 oz) plain flour
    • 150g (5 oz) caster sugar
    • 150g (5 oz) butter
    • 1 teaspoon baking powder
    • 2 eggs

    1. Heat the oven to 180 C / Gas 4 and line a 12-hole cupcake tin with paper cupcake cases.
    2. Put all the ingredients in a bowl and beat together for about 2 minutes until smooth and well blended. Spoon into the prepared paper cases.
    3. Bake in the oven until well risen and golden brown on the top, about 15 to 20 minutes.
