An easy Polish recipe for red cabbage stewed in butter with a bit of onion. Lovely with roast beef, pork, goose or duck.

1/2 head red cabbage, shredded
4 tablespoons clarified butter
1 large onion, chopped
salt and pepper to taste
a pinch of sugar

Fill a saucepan about 2cm deep with cold water; bring to the boil. Add cabbage and cook until it starts to soften, stirring from time to time.
Melt clarified butter in a large frying pan; add onion and fry until soft. Sprinkle with salt and pepper. Add cabbage with some water from the pan; continue to cook until soft. Stir from time to time and add more water if cabbage gets too dry.
Season to taste with a pinch of sugar and more salt and pepper, if needed.
