Fresh coriander and jalapeno aioli

    This fresh coriander, jalapeno and garlic aioli is surprisingly versatile. I have used it as a dressing for coleslaw, served it as a topping for fish tacos and used as a dip for Mexican dishes.

    Serves: 10 

    • 180ml olive oil mayonnaise
    • 25g firmly packed fresh coriander
    • 1 jalapeno chilli pepper, seeds and membrane removed, diced
    • 1 1/2 garlic cloves
    • 1/2 lime, juiced
    • 3/4 teaspoon ground cumin
    • 1/4 teaspoon salt, or to taste

    1. Blend mayonnaise, fresh coriander, jalapeno chilli, garlic, lime juice, cumin and salt together in a blender or food processor until smooth. Pour mixture into a bowl, cover the bowl with cling film, and refrigerate until flavours blend, at least 1 hour.

    Delicious!!! The ingredients are excellent and is not super spicy but with the amazing flavor of the jalapeno pepper. I love cilantro so there's no more to say but that is really, really good.
