Fresh coriander and jalapeno aioli

    This fresh coriander, jalapeno and garlic aioli is surprisingly versatile. I have used it as a dressing for coleslaw, served it as a topping for fish tacos and used as a dip for Mexican dishes.

    Ingredients
    Serves: 10 

    • 180ml olive oil mayonnaise
    • 25g firmly packed fresh coriander
    • 1 jalapeno chilli pepper, seeds and membrane removed, diced
    • 1 1/2 garlic cloves
    • 1/2 lime, juiced
    • 3/4 teaspoon ground cumin
    • 1/4 teaspoon salt, or to taste

    Method

    1. Blend mayonnaise, fresh coriander, jalapeno chilli, garlic, lime juice, cumin and salt together in a blender or food processor until smooth. Pour mixture into a bowl, cover the bowl with cling film, and refrigerate until flavours blend, at least 1 hour.

    Delicious!!! The ingredients are excellent and is not super spicy but with the amazing flavor of the jalapeno pepper. I love cilantro so there's no more to say but that is really, really good.     This aioli is amazing! We used it for fish tacos and it was the perfect combo. Left the jalapeño seeds and membrane for added kick. Didn't have olive oil mayo so I used regular mayor and added about 2tsp olive oil for flavor.  -  11 Jul 2017  (Review from Allrecipes US | Canada)
