Fresh coriander and jalapeno aioli

    This fresh coriander, jalapeno and garlic aioli is surprisingly versatile. I have used it as a dressing for coleslaw, served it as a topping for fish tacos and used as a dip for Mexican dishes.

    Serves: 10 

    • 180ml olive oil mayonnaise
    • 25g firmly packed fresh coriander
    • 1 jalapeno chilli pepper, seeds and membrane removed, diced
    • 1 1/2 garlic cloves
    • 1/2 lime, juiced
    • 3/4 teaspoon ground cumin
    • 1/4 teaspoon salt, or to taste

    1. Blend mayonnaise, fresh coriander, jalapeno chilli, garlic, lime juice, cumin and salt together in a blender or food processor until smooth. Pour mixture into a bowl, cover the bowl with cling film, and refrigerate until flavours blend, at least 1 hour.

    Holy moly! This sauce was bomb. Definitely lick the spoon sauce. I only made the recipe as is the first time and it was gone within minutes. Made yucca fries with it and used that as a dip.     This is literally lick the spoon good! Addictive even. I’ve made this recipe twice for tacos, and have loved it every time. First was with fish tacos for friends (they raved) and then again with a basic pulled chicken (lightly seasoned with chili powder, cumin, garlic powder, salt and pepper): amazing.     I made one small revision and added a full avocado, a bit more lime, cuman, salt and cilantro and I have to say, this was absolutely delicious. This is probably my favorite recipe on this site for quite awhile. With the avocado, it looked like a shamrock shake and was almost as good only savory. This would go on just about anything.
