Japanese miso chicken

    Chicken is marinated in a Japanese-inspired Misoyaki mix of miso, soy sauce and sake then baked in this flavourful, low-effort dish.

    Serves: 4 

    • 120ml white (shiro) miso
    • 120ml sake (Japanese rice wine)
    • 120ml soy sauce
    • 55g light brown sugar
    • 2 teaspoons Asian (toasted) sesame oil
    • 450g boneless, skinless chicken breast, cut into strips

    1. Mix white miso, sake, soy sauce, brown sugar and sesame oil together in an oven-safe glass or ceramic baking dish. Stir in chicken strips. Cover with clingfilm and let marinate in the fridge, at least 30 minutes.
    2. Preheat oven to 190 C / Gas 5.
    3. Bake in the preheated oven until marinade has thickened and chicken has cooked through, 30 to 35 minutes.
