Fresh coriander houmous

    Traditional houmous gets a little kick when cayenne pepper, fresh coriander and cumin are added to the recipe.

    Serves: 4 

    • 1 (400g) tin chickpeas, drained and 60ml of liquid reserved
    • 25g freshly chopped coriander
    • 80g chopped onion
    • 2 cloves garlic, finely chopped
    • 1 teaspoon ground cumin
    • 1/2 teaspoon cayenne pepper
    • 1/4 teaspoon sea salt
    • 1 teaspoon extra-virgin olive oil, or to taste
    • 1 teaspoon lemon juice (or lime juice)

    1. Pulse chickpeas, coriander and onion in a blender or food processor until roughly chopped; stir. Add garlic, cumin, cayenne pepper and sea salt; pulse, adding reserved chickpea liquid until desired thickness is reached. Pour olive oil and lemon juice into houmous and stir.
