Delicious chocolate chip banana bread

    This wholemeal banana and dark chocolate quick bread is also packed with walnuts and sweetened with Manuka honey.

    Ingredients
    Serves: 8 

    • 75g butter, at room temperature
    • 80ml Manuka honey
    • 225g mashed bananas
    • 1 teaspoon vanilla extract
    • 200g wholemeal flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon fleur de sel (sea salt flakes)
    • 4 tablespoons hot water
    • 50g dark chocolate chips
    • 2 tablespoons chopped walnuts

    Method

    1. Preheat oven to 170 C / Gas 3. Grease a loaf tin.
    2. Combine butter and honey in a large bowl; beat with an electric mixer until well combined. Mix in bananas and vanilla extract.
    3. Mix wholemeal flour, bicarbonate of soda, baking powder and salt flakes together in a separate bowl; mix into the butter mixture until combined.
    4. Whisk hot water into the cake mixture. Fold in dark chocolate chips and chopped walnuts. Pour cake mixture into the prepared loaf tin.
    5. Bake in the preheated oven until a skewer inserted into the centre of the loaf comes out mostly clean, about 45 minutes. Cool in the tin for 5 minutes; turn out onto a baking rack to cool completely.

    Note:

    If you don't have fleur de sel or manuka honey, just use table salt and normal honey. But trust me, the richness of the Manuka honey adds so much flavour to this banana bread.
