Pan-fried breaded trout

    In order to preserve the delicate flavour of trout, it's best to lightly coat it in seasoned breadcrumbs and then simply fry it quickly in the pan.

    Serves: 4 

    • 2 tablespoons breadcrumbs
    • 1/2 teaspoon paprika
    • 1/4 teaspoon sea salt
    • 1/2 teaspoon garlic granules
    • 1/4 teaspoon ground black pepper
    • 1 pinch ground chilli
    • 1 pinch dried dill
    • 800g trout fillets (with skin)
    • vegetable oil for frying

    1. In a small bowl, combine breadcrumb with spices and herbs; mix well. Sprinkle over fish on both sides.
    2. In a large frying pan, heat oil over medium heat. Add fish skin side down. Fry for 10 to 12 minutes (depending on the thickness of the trout), or until fish flakes easily.
