Broad bean, pea and green bean salad with sesame dressing

    Your favourite beans with a really tasty dressing. I used broad beans, French beans and fresh podded peas this time but cannelloni beans, kidney beans, butter bean, and even sweetcorn, etc. whatever you have or fancy will be delishous with this soy dressing.

    Serves: 4 

    • 300g fresh broad beans
    • 300g French beans, chopped
    • 300g fresh peas, podded
    • For the dressing
    • 1 red onion, minced
    • 2 garlic cloves, minced
    • 1 tablespoon sesame seeds
    • 1 tablespoon light oil
    • 2 tablespoons dark soy sauce
    • 4 tablespoons rice vinegar
    • 1 tablespoon sherry vinegar
    • 4 tablespoons toasted sesame oil
    • 4 tablespoons lemon juice
    • salt and black pepper to taste

    1. Steam the broad beans just long enough so they slip from their outer skins. Steam the French beans and peas till al dente.
    2. Place the cooked beans and peas in a bowl. Pop them in the fridge till serving.
    3. Blitz the sesame seeds and oil to make a paste (tahini paste). In a bowl whisk all the ingredients for the dressing.
    4. Before serving, stir the dressing as it seperates quickly. Toss with the beans and serve.


    Ready-made tahini sauce may be used instead of sesame seeds and light oil.
