Mark's spiced apple cake

    This simple apple cake is best served warm with vanilla ice cream or clotted cream.

    Ingredients
    Makes: 2 loaf cakes

    • 250g caster sugar
    • 250g butter
    • 4 large eggs
    • 250g self-raising flour
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground allspice
    • 1 fresh apple - peeled, cored and diced
    • 1 small jar (250ml) apple sauce

    Method
    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat the oven to 175 C / Gas 4. Line two loaf tins with baking paper.
    2. Cream the sugar an butter until pale cream in colour. Beat in the eggs, flour and spice. Gently mix in the apple and apple sauce. Pour cake mixture into 2 lined loaf tins.
    3. Bake in the preheated oven until a tester inserted in the centre of the cakes comes out clean, about 40 to 50 minutes.
