No bake strawberry swirl cheesecake

    Just in time for Wimbledon fortnight is a recipe using strawberries and cream in a deliciously easy to follow recipe. Perfect summer tea time treat to make your summer go with a bang. A great centrepiece at any barbeque. A no bake recipe for a cheesecake. The flavours blend so well together. The swirl of strawberry sauce  in the filling adds the strawberry flavour throughout the dish. There are so many fruits which can be used to make these cheesecake from blueberries to cherries you just have to let your imagination run wild and explore the flavour combinations which work. Delicious served with a glass of sweet white wine or bubbly prosecco or just a cup of tea.

    Ingredients
    Makes: 1 cake

    • 75g butter
    • 300g crushed digestive biscuits
    • 150ml double cream
    • 150ml creme fraiche
    • 150g icing sugar
    • 200g cream cheese, softened
    • 1 teaspoon vanilla essence
    • 2 tablespoons strawberry sauce
    • lots of strawberries

    Method
    Prep:30min  ›  Ready in:30min 

    1. Melt the butter in a pan. Add the crushed biscuits.
    2. Press into a loose bottomed 18cm (7 in) round cake tin and place in the fridge whilst you make the filling.
    3. In a bowl, weigh out the cream, creme fraiche, icing sugar, cream cheese and vanilla. Whisk together until the whisk leaves a trail in the mixture.
    4. Line the edge of the tin with sliced strawberries.
    5. Spoon onto the base and refrigerate.
    6. Drizzle the strawberry sauce onto the top of the filling. Swirl in the filling with the blade of a knife. Place back in the fridge.
    7. Just before serving add the halved strawberries as decoration.
