Fresh berry cobbler

    This quick and easy fruit cobbler is made with blackberries but you could use any fresh or frozen berries. Lovely served with ice cream.

    Ingredients
    Serves: 9 

    • 300g fresh blackberries
    • 1 teaspoon ground cinnamon
    • 1 teaspoon lemon juice
    • 300g caster sugar, divided
    • 125g plain flour
    • 1 teaspoon baking powder
    • 120ml milk
    • 45g butter, melted
    • 1 tablespoon cornflour
    • 240ml boiling water

    Method

    1. Preheat oven to 180 C / Gas 4. Grease a 20cm baking dish.
    2. Mix blackberries, cinnamon and lemon juice together in a bowl until coated. Pour into the prepared baking dish.
    3. Combine 100g caster sugar, flour and baking powder together in a separate bowl; stir in milk and butter. Spoon cobbler batter over blackberry mixture, covering as much as possible.
    4. Stir remaining caster sugar and cornflour together in a bowl; stir in boiling water until sugar and cornflour are dissolved. Pour mixture over berry mixture.
    5. Bake in the preheated oven until a skewer inserted in the centre comes out clean, 45 to 50 minutes.
