Honey apple cake

    A lovely cake with chunks of apples flavored with honey, coffee and grated lemon rind.

    • 150g butter or margarine, softened
    • 165g light brown soft sugar
    • 3 eggs
    • 180ml honey
    • 2 teaspoons lemon zest
    • 120ml strong freshly brewed coffee
    • 250g plain flour
    • 180g wholemeal wheat flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 3/4 teaspoon ground nutmeg
    • 250g apples, peeled, cored and diced
    • 60g walnuts, coarsely chopped

    1. In a large bowl, cream the butter or margarine with the brown sugar. Beat in the eggs, then the honey, lemon rind, and coffee.
    2. In another bowl, stir together the flours, baking powder, bicarb of soda, salt, cinnamon and nutmeg. Beat into the creamed mixture. Stir in the apples and walnuts.
    3. Turn the mixture into a greased and floured tube pan. Bake the cake into a preheated 175 C / Gas 3-4 until it tests done with a toothpick., about 70 minutes.

    I did not add the apple into the cake, instead I peeled one apple and shaved half of it onto the top before baking. I also felt it was missing something so I made an orange glaze which improved it a lot! This cake is DELICIOUS after adding the orange glaze. (1/4 cup butter, 2/3 cup white sugar, 1/3 cup orange juice in small saucepan over medium heat, stir frequently until sugar and butter dissolve.
