Quick chicken enchiladas

    I found the enchilada kit from the supermarket a bit bland so I made chicken enchiladas with it but with a few additions.

    Ingredients
    Serves: 4 

    • 1 ASDA® Mexican Style Enchilada Dinner Kit
    • 2 onions
    • 2 peppers
    • 500g boneless skinless chicken breast
    • 3 teaspoons chilli powder
    • 1 teaspoon garlic granules
    • 1 teaspoon tumeric
    • 150g grated cheese

    Method

    1. Preheat the oven to 180 C / Gas 4. Chop the onions and cut the peppers into strips and cook in a grill pan until soft.
    2. Cut the chicken into strips and cook in a wok until no longer pink in the centre.
    3. Once the chicken is cooked, add the spices and stir.
    4. And the tomato sauce from the kit to the chicken. Put the wraps in the microwave for 1 minute, then separate them on the kitchen counter.
    5. Divide the chicken and veg between the wraps and roll them up.
    6. Place into a oven-proof dish and add the second packet of sauce on top, then sprinkle with the grated cheese.
    7. Cook in the preheated oven until heated through and bubbly, about 10 minutes.
