Meskouta (Moroccan orange cake)

    Meskouta is the Moroccan version of a sponge cake, a quick and easy cake for all occasions. This recipe uses oil instead of butter and has subtle orange flavour.

    • 3 eggs
    • finely grated zest of 1 orange
    • 200g caster sugar
    • 120ml vegetable oil
    • 250ml orange juice, preferably freshly squeezed
    • 400g plain flour
    • 3 teaspoons baking powder

    1. Preheat the oven to 180 C / Gas 4. Grease a cake tin and dust with flour.
    2. Beat the eggs with the orange zest and sugar with an electric mixer until thick and light-coloured. Add the oil and orange juice in a thin steady stream while beating.
    3. In another bowl sift the flour with the baking powder. Gradually add this to the egg mix and continue to beat to a smooth, airy mixture.
    4. Pour the mixture in the tin and bake in the preheated oven until a tester inserted in the centre comes out clean, about 45 minutes.
