Syrian green beans with tomatoes

    This side dish is very popular in Syria and Lebanon. The beans taste best at room temperature, they are even tastier the next day.

    Ingredients
    Serves: 4 

    • 3 tablespoons olive oil
    • 1 small onion, minced
    • 1 garlic clove, minced
    • 1 tablespoon cumin spice mix
    • 300g green beans, trimmed
    • 1 (400g) tin chopped tomatoes
    • 1 tablespoon tomato puree
    • 1/2 teaspoon salt
    • extra virgin olive oil for drizzling

    Method

    1. Heat the olive oil in a saucepan and add the onion, garlic and cumin spice mix. Cook at low heat until the onion is translucent, taking care not to let the garlic brown.
    2. Add the beans, tomatoes and tomato puree and enough water to cover. Salt and simmer uncovered until the beans are tender and the liquid is reduced. To serve, drizzle with extra virgin olive oil.
