Makes: 250 grams
7 tablespoons cumin seeds
3 tablespoons coriander seeds
2 tablespoons black peppercorns
5 tablespoons ground paprika
3 tablespoons ground ginger

Toast the cumin, coriander and pepper in an ungreased frying pan until fragrant. Grind in a spice mill and sift then mix with the remaining ingredients. Store in an airtight container for up to 6 months.
