Cumin spice mix

    This Middle Eastern-style spice mix can be used for vegetables, soups and stews.

    • 7 tablespoons cumin seeds
    • 3 tablespoons coriander seeds
    • 2 tablespoons black peppercorns
    • 5 tablespoons ground paprika
    • 3 tablespoons ground ginger

    1. Toast the cumin, coriander and pepper in an ungreased frying pan until fragrant. Grind in a spice mill and sift then mix with the remaining ingredients. Store in an airtight container for up to 6 months.
