Crunchy treacle tart

    I love this treacle tart, especially with the cornflakes on top, lovely with custard or vanilla ice cream.

    Makes: 1 tart

    • 1 sheet ready-to-bake shortcrust pastry
    • 250g golden syrup
    • 1/2 lemon, juiced
    • 75g dried white breadcrumbs
    • 25g cornflakes

    1. Preheat the oven to 180 C / Gas 4. Line a tart tin with the shortcrust pastry.
    2. For the filling, combine the syrup, lemon juice and breadcrumbs in a mixing bowl and then spoon into the pastry case.
    3. Crush the cornflakes lightly with your hands and sprinkle them over the top of the tart. Bake in the preheated oven until golden brown, about 20 minutes. Serve with vanilla ice cream.
