Mushroom tortilla 'pizza'

    This individual tortilla 'pizza' topped with sauteed mushrooms, mozzarella cheese and cherry tomatoes is a quick, easy dinner for one.

    Serves: 1 

    • 2 teaspoons garlic-infused oil
    • 1 teaspoon butter
    • 3 white mushrooms, sliced
    • 1 (23cm) flour tortilla
    • 30g grated mozzarella cheese
    • 6 cherry tomatoes, sliced
    • 1 teaspoon dried oregano, or to taste
    • 1/2 teaspoon garlic powder, or to taste
    • 1 teaspoon olive oil, or more to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Heat garlic oil and butter in a pan over medium heat. Add mushrooms; cook and stir until dark and tender, about 5 minutes.
    3. Place tortilla on a pizza tray or baking stone. Spoon mushrooms, with accumulated juices, on top. Scatter mozzarella cheese and cherry tomatoes over mushrooms. Sprinkle oregano and garlic powder on top. Drizzle pizza with olive oil.
    4. Bake in the preheated oven until edges of the tortilla start to brown, 8 to 10 minutes.
