Fresh pineapple salsa

    This very simple salsa with fresh pineapple, red pepper, shallots and fresh lemon juice pairs well with grilled chicken or salmon.

    • 165g chopped fresh pineapple
    • 50g chopped red pepper
    • 40g chopped shallots
    • 1 tablespoon fresh lemon juice
    • 1/4 teaspoon dried basil
    • 1 pinch dried chilli flakes

    1. Place pineapple, red pepper, shallots, lemon juice, basil and red pepper flakes in a glass bowl; stir well.
    2. Refrigerate for at least 1 hour to allow the flavour to develop.
