100g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
1 large banana, mashed
50g caster sugar
55g soft brown sugar
1 egg white
2 tablespoons milk
1 tablespoon rapeseed oil
1/2 teaspoon vanilla extract
50g black sesame seeds
40g chopped walnuts

Preheat oven to 180 C / Gas 4. Grease a loaf tin.
Whisk flour, bicarbonate of soda, baking powder, cinnamon, nutmeg and salt together in a bowl. Mix banana, caster sugar, brown sugar, egg white, milk, oil and vanilla extract together in a separate bowl; stir into flour mixture just until mixture is moistened. Fold sesame seeds and walnuts into mixture; pour into prepared loaf tin.
Bake loaf cake in the preheated oven until a skewer inserted in the centre comes out clean, 35 to 40 minutes. Cool in tin before transferring to a wire rack to cool completely.
