Black sesame seed and walnut banana bread

    Black sesame seeds and walnuts give traditional banana bread a hit of flavour and texture.

    Serves: 4 

    • 100g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon (optional)
    • 1/4 teaspoon ground nutmeg (optional)
    • 1/4 teaspoon salt
    • 1 large banana, mashed
    • 50g caster sugar
    • 55g soft brown sugar
    • 1 egg white
    • 2 tablespoons milk
    • 1 tablespoon rapeseed oil
    • 1/2 teaspoon vanilla extract
    • 50g black sesame seeds
    • 40g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease a loaf tin.
    2. Whisk flour, bicarbonate of soda, baking powder, cinnamon, nutmeg and salt together in a bowl. Mix banana, caster sugar, brown sugar, egg white, milk, oil and vanilla extract together in a separate bowl; stir into flour mixture just until mixture is moistened. Fold sesame seeds and walnuts into mixture; pour into prepared loaf tin.
    3. Bake loaf cake in the preheated oven until a skewer inserted in the centre comes out clean, 35 to 40 minutes. Cool in tin before transferring to a wire rack to cool completely.
