Chocolate chip cashew date bars

    The whole family will love these no-bake chocolate chip cashew and date bars as a snack; just blend ingredients and chill to set.

    Serves: 8 

    • 175g pitted dates
    • 175g finely chopped cashews
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 60g chocolate chips, or more to taste

    1. Line a 20cm square baking tin with greaseproof paper.
    2. Place dates in a bowl and cover with cool water until soft, 30 to 60 minutes (see note). Drain, squeeze out extra liquid, and reserve. Chop dates into a thick paste.
    3. Combine dates with cashews, vanilla extract and salt in a bowl. Fold in chocolate chips. Press mixture firmly into prepared baking tin until compact. Refrigerate until set, 1 hour to overnight.
    4. Slice into bars.


    You will not need to soak dates if they are already soft enough to chop.
