Spinach walnut pesto

    This flavourful pesto with spinach, parsley, walnuts and Parmesan cheese will spruce up any bowl of pasta and is quick and easy to make.

    Serves: 4 

    • 60g baby spinach leaves, stems removed
    • 80g freshly grated Parmesan cheese
    • 60g fresh parsley leaves, chopped
    • 60g chopped walnuts
    • 4 tablespoons water
    • 3 cloves garlic
    • 1/4 teaspoon salt, or more to taste
    • 1/8 teaspoon freshly ground black pepper
    • 120ml extra-virgin olive oil

    1. Place spinach, Parmesan cheese, parsley, walnuts, water, garlic, salt and pepper in a food processor; blend until well combined. Pour in oil slowly, while processor is running, until mixture forms a smooth paste.
