Easy peasy Scotch pancakes

    Serves: 2 

    • 100g (4 oz) self-raising flour
    • 50g (2 oz) caster sugar
    • 1 pinch salt
    • 1 egg, beaten
    • 1 dash vanilla extract
    • 1 knob butter
    • 4 tablespoons milk

    1. Sift the flour into the bowl and mix with the sugar and salt.
    2. Next, add the beaten egg and gradually the milk. You should have a thick batter. Add vanilla extract.
    3. Use a non-stick frying pan or a normal pan with melted butter. Once pan is hot and the mixture is ready, pour about 1 tablespoon of the mixture into the pan. Cook for about a minute on each side depending on how hot the pan is.
