Baked gooseberries

    This quick baked fruit dessert can be made with fresh or frozen gooseberries and the amounts can be easily doubled or more. It is best served warm with creme fraiche, vanilla ice cream or whipping cream.

    Ingredients
    Serves: 2 

    • 300g gooseberries, fresh or frozen
    • 100g light brown soft sugar
    • 1 tablespoon fine wheat semolina
    • 2 pinches ground ginger

    Method

    1. Preheat the oven to 190 C / Gas 5.
    2. Divide the gooseberries among 10cm ramekins and mix with half of the sugar, semolina and ginger.
    3. Bake in the preheated oven until browned and bubbly, about 30 minutes. Cool slightly, then serve warm or lukewarm with creme fraiche, vanilla ice cream or whipping cream.
