Kefir chocolate chip pancakes

    Kefir gives these chocolate chip pancakes a light and fluffy texture, perfect for a satisfying breakfast that is quick and easy to make.

    Serves: 12 

    • 225g plain flour
    • 2 teaspoons caster sugar
    • 1 1/2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 3/4 teaspoon salt
    • 475ml kefir
    • 2 eggs
    • 100g chocolate chips, or more to taste

    1. Mix flour, sugar, baking powder, bicarbonate of soda and salt together in a large bowl. Add kefir and eggs; stir until pancake batter is moist but still lumpy. Fold in chocolate chips.
    2. Heat a lightly oiled non-stick pan over medium-high heat. Drop pancake batter by large spoonfuls onto the pan and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until golden on the other side, 2 to 3 minutes. Repeat with remaining pancake batter.

    I think buttermilk produces a better pancake... these were sour. Chocolate chips probably cover up the sourness, but I left them out in the interest of health.  -  07 May 2017  (Review from Allrecipes US | Canada)
