Cardamom-maple salmon fillets

    Cardamom, paprika, ground coriander and maple syrup are the main seasonings in this pan-fried salmon dish.

    Ingredients
    Serves: 6 

    • 1 1/2 teaspoons salt
    • 1 teaspoon paprika
    • 1 teaspoon ground cardamom
    • 1 teaspoon ground coriander
    • 1/2 teaspoon freshly ground black pepper
    • 4 tablespoons grapeseed oil
    • 2 tablespoons maple syrup
    • 1 (900g) salmon fillet, sliced into 3 into pieces

    Method
    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Stir salt, paprika, cardamom, ground coriander and black pepper together in a bowl. Add oil and maple syrup and stir until evenly combined.
    2. Preheat a non-stick frying pan over medium-high heat until hot.
    3. Dredge salmon pieces through the maple syrup mixture until evenly coated on all sides.
    4. Cook salmon in the preheated pan until fish flakes easily with a fork, 5 to 7 minutes per side.

    Tip:

    Be careful not to use too high of a temperature or the paprika-maple mixture will burn.

    What an amazing recipe! I made it exactly as written, except that I grilled it outdoors instead of cooking in a pan. The flavor was outstanding. The cardamom really takes this to another level, so don't leave it out! It's a pricey spice, but well worth it! I will be making this frequently, especially for guests because it will definitely impress. Next time I will try it with the orange zest, as suggested.
