Italian apple crostata

    I'm not a huge fan of desserts but there are no words for how good this rustic Italian-style apple crostata is! You'd think something as simple as an apple tart wouldn't be as decadent as this, but you would be very, very wrong! Serve warm with vanilla ice cream.

    Serves: 6 

    • Pastry
    • 225g plain flour
    • 2 tablespoons caster sugar
    • 1 teaspoon salt
    • 175g chilled unsalted butter, cut into small pieces
    • 2 tablespoons ice water, or more if needed
    • Apple filling
    • 1 lemon, halved
    • 6 small apples, peeled and thinly sliced
    • 100g caster sugar
    • 1/2 teaspoon ground cinnamon
    • 2 teaspoons caster sugar

    Method

    1. Mix flour, 2 tablespoons sugar and salt together with an electric mixer until combined. Mix in butter until mixture resembles coarse crumbs. Add ice water, 2 teaspoons at a time, while the mixer is running until pastry dough just holds together. Test dough by pinching a small amount between your fingers; if it is crumbly, add a 1 teaspoon more ice water at a time.
    2. Wrap pastry in cling film and chill until slightly firm, 20 to 30 minutes.
    3. Preheat oven to 180 C / Gas 4.
    4. Squeeze 1/2 the lemon over the apple slices to keep from browning.
    5. Place a large piece of parchment on a flat work surface. Roll dough into a round 30cm in diameter, 1cm thick. Arrange apple slices in 2 layers on the pastry, leaving a 1 1/2cm border all around. Fold up the border, pleating the edge to make it fit; leave most of the apples uncovered.
    6. Combine 100g sugar and 2 teaspoons cinnamon in a small bowl. Sprinkle over apples. Squeeze remaining 1/2 lemon over apples. Sprinkle 2 teaspoons sugar over tart; transfer tart on the parchment to a baking tray.
    7. Bake in the preheated oven until tart is golden brown, 50 to 60 minutes.

    Note:

    You can use 1 tablespoon water and 1 tablespoon lemon juice in the pastry if preferred.
